Cilantro Lime Avocado Spread

This recipe is pretty much my chunky guacamole recipe, except I didn’t dip anything in it…I spread it on a sammich, which is why I decided to change the name to Cilantro Lime Avocado Spread. I think I rationalized that quite nicely!

Tomato Avocado Cucumber Chick Pea Salad with Feta and Greek Lemon Dressing

I don’t know why I always make such big salads. I guess with the ones that have chicken I’m always just making enough so we can eat it as a main dish for dinner, then with salads like this I just think of them as the perfect salad to take to a get together. I mean when they are this good, why not make a big salad with enough to share? This is a very summery salad with such vibrant flavors. I love the way the lemon fairs with the fresh herbs and how it just brightens the flavors of the fresh veggies (and fruits if you want to get technical with tomatoes and avocados). Greek flavors are one of my favorite and I love what they bring to this salad (but I probably say that about everything. I also can’t get enough of the Italian, Mexican, Indian, American and Chinese flavors).

Classic Margarita

So, I was planning to wax poetic about my love of margaritas today. But I have much more important news: I think I may have finally discovered the secret to me becoming a “brunch” person. Now hold on, don’t get me wrong. I always enjoy a good brunch, and will eat my eggs and bacon and waffles and biscuits and gravy (accompanied by loads of coffee) anytime my friends send out the group texts to meet up for a lazy Saturday morning. But I’m generally not all that hungry in the mornings, and have just never been as obsessed with breakfast foods as the rest of the world. So as such, I’ve just always been more of a “social brunch-er”.

Southwest Quinoa and Grilled Corn Salad

I’m partial to recipes that put me somewhere in the vicinity of where their flavors hail from. New England Clam Chowder. Texas Toast. California Cobb. Baltimore Pit Beef Sandwiches. Long Island Ice Tea. Clink-a-link with that loaded drinky drink. I suppose I think if I close my eyes and simply say the dish’s name over and over, then take a bite, maybe it will teleport me to a seaside port or salty desert oasis.
